Lighthouses and Eggs
It's our third day here in Ilwaco, WA at Cape Disappointment State Park. On Monday, we rode our bikes from our campsite to Long Beach, and we've decided to ride again today.
Yesterday, we explored the park, spending most of the morning walking along the beach and North Jetty. I do love it here:

Wildlife...
and a yurt. Life doesn't get much better than that!
So, let's talk about meals...
To keep our meal costs low, we've made a deal to cook meals ourselves, and eat as much fresh fruit and veggies as possible. If we do eat at a restaurant, we'll go during lunch - typically the cheapest time of day at restaurants. We also have the standard canned soups and freeze-dried meals, but we'll use those for emergencies and backpacking trips.
There is one daily vice that we won't part with, though - chocolate!
It's been fun preparing the daily menu and being creative with recipes and cooking methods. Remember that we don't have a fancy stove or oven. We are using a small camping stove with white gas, so it's been (and will be) trial and error for the next few weeks.
Tonight for dinner, we're eating soba noodles (Thanks, Blanche!), broccoli with pesto sauce, and shrimp-stuffed salmon from the local market. It's nice to be in a spot where you can get fresh seafood - Hmmm!
For breakfast, we had a cheese and avocado sandwich with a banana on the side. I must admit, I'm getting a little frustrated cooking eggs on this stove. At the condo, it was easy to control the temperature on the range, but it's more challenging to control the temperature on this cooking stove. I've tested various oils and temperatures, and even tried placing a grill 2 inches from the heat source, but no luck yet. I am determined to figure out how to cook eggs without them sticking to the bottom. The good news is we have plenty of time to figure this one out. Who doesn't like a challenge?

I was so excited to get your email. And I loved reading about your Mount Rainier adventure. We did that at Crater Lake--who ever would think about all the campgrounds being closed? I was very sure that we were on a cornice with our not very snow worthy tent. We provided a lot of comic relief when we tried to ski in with backpacks. Gave lots of people a good laugh, so I completely sympathized with your navigational problems in the snow. Keep on truckin'and bloggin'. Love LN

Lighthouses and eggs are two of my favorites--la-dee-la-la. (Psst, I am not seeing any news about those crunchie things. A secret, eh?)
it doesn't even look like its raining there. here it is snow/rain today
The best thing to do with the eggs is to to hold the pan above the burner 9actually hold0 and adjust the hieght as needed, also try using vegitable oild and don't wiat for the oil to heat up... You could also add a drop of water to the eggs (not milk)... And don't expect anything fancy... Lol
